Homemade Salted Caramel Sauce

Ingredients

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • ½ cup heavy cream (at room temperature)
  • 1-2 teaspoons flaky sea salt (such as Maldon or Sicilian Sea Salt)

Instructions

Melt the sugar: Add sugar to a medium stainless steel saucepan over medium heat. Stir constantly with a wooden spoon as the sugar melts and caramelizes. It may clump at first, but will eventually become smooth. Continue cooking until it reaches a deep amber color (about 5-7 minutes).

Add the butter: Carefully whisk in the butter pieces until completely melted. The mixture will bubble vigorously.

Add the cream: Remove from heat and slowly pour in the heavy cream while whisking constantly. The mixture will bubble up dramatically, so be careful. Whisk until smooth.

Finish with salt: Stir in the sea salt to taste. Start with 1 teaspoon and add more if desired.

Cool and store: Allow the caramel to cool slightly before using. The sauce will thicken as it cools. Store in an airtight jar in the refrigerator for up to 2 weeks.
