Sicilian Cannoli Recipe: A Sweet Symphony from the Island of Flavors

Ingredients:

- 2 cups ricotta cheese

- 1/2 cup powdered sugar

- 1 teaspoon vanilla extract

- 1/4 cup finely chopped dark chocolate or mini chocolate chips

- 1/4 cup finely chopped pistachios

- 12 cannoli shells (store-bought or homemade)

- Powdered sugar, for dusting

Preparation: 

-The day before preparing the cannoli place the ricotta cheese in a cheesecloth, a sieve, or strainer and suspend it over a bowl. Put it back into the fridge so that any excess liquid can drain out of the cheese.
 

1. Prepare the Filling:

- In a bowl, combine ricotta cheese, powdered sugar, and vanilla extract.

- Mix until smooth and creamy.

(If the consistency is not right, too runny, you will need to add cornstarch. You can add a teaspoon to a tablespoon, depending on how runny it is, into a small bowl with an equal amount of water to cornstarch. Stir until dissolved and add this liquid into the ricotta mixture until well combined.)


2. Add the Chocolate and Pistachios (if desired):

- Fold in the finely chopped dark chocolate or mini chocolate chips and the finely chopped pistachios into the ricotta mixture. This adds a delightful texture and flavor.
 

3. Fill the Cannoli Shells:

- If using store-bought cannoli shells, fill a pastry bag with the ricotta mixture and pipe it into each shell, evenly distributing the filling.

- If making homemade shells, ensure they are cooled before piping in the filling.
 

4. Optional Garnish:

- Dip the ends of the cannoli in additional chopped pistachios or mini chocolate chips for a decorative touch.
 

5. Dust with Powdered Sugar:

- Just before serving, dust the filled cannoli with powdered sugar.
 

6. Serve and Enjoy:

- Arrange the cannoli on a platter and serve immediately to maintain the crispness of the shells and the freshness of the filling.
