Our salt comes from the IGP-protected salt pans of Trapani, Sicily, where seawater has been turned into salt by sun, wind, and hand tools for nearly three thousand years. Each batch is hand-harvested using traditional solar evaporation, then packed in small batches in the USA. Nothing is added and nothing is taken away: no anti-caking agents, no bleaching, no industrial refining. Just pure coarse crystals, naturally containing the minerals the Mediterranean left in them — iodine, fluorine, magnesium, and potassium.
The coarse grain is the workhorse cut. Crush a pinch over a finished steak, roasted vegetables, or seafood for crunch and a clean burst of flavor, or drop it straight into pasta water, soups, and brines.

Will it refill my jar? One 5 oz pouch completely refills our 5 oz jar, and gives the 7 oz jar a generous top-up. It also pours neatly into grinders and salt cellars.
Will it work in my grinder? Yes — the coarse crystals are sized for standard salt grinders and mills, and they grind cleanly because there are no additives to gum things up.
What does hand-harvested IGP Sicilian salt mean? IGP (Protected Geographical Indication) is the EU's certification that this salt genuinely comes from Trapani's traditional salt pans and is made by the historic method — not factory-produced salt with a Sicilian label.
